無水乳脂肪の分別画分の性状と分別条件の検討 OAK

無水乳脂肪を最終温度23℃で1段階自然分別して、ヨウ素価27で軟化点41.1℃の結晶画分(HF1)を24%の収量で得た。次いで、液状画分(SF1)に対して2段階分別を行い、分別物の収量と性状に及ぼす初期温度、最終温度および撹拌速度の影響を検討した。初期温度18℃と30℃の条件で比較すると、後者では不定形の大きな結晶(50μm程度)のみが析出して濾過が存易であった。得られた結晶画分(HF2)は、固体脂指数が高く、また1 段階分別で得られたHF1に次ぐ高い軟化点を有していた。SFlを冷却すると、12.5℃で温度が下がらない「hold状態」になり、500μm程度の不定形結晶と小さい150μm程度の球形結晶が得られた。それより少し高い温度(13℃)に設定すると、小さい球形結晶(100μm程度)のみが大量に生じた。この場合、濾過が困難であったがHF2の収量は43%と高かった。ヨウ素価から判断すると、得られたHF2は12.5℃の条件と比べて融け易い性状であった。これは、中融点性のトリグリセリド種がより多く液状画分からHF2へと移行したことによると考えられた。撹拌速度については、速い条件(50rpm)でも遅い粂件 (28rpm)でも細かい結晶(50~100μm)が析出し、濾過効率の面から中間速度(43rpm)が適当であった。

Anchovies of the Sea of Azov and The Black Sea: Regularities of wintering migrations (Brief review) IBSS Repository

Close relation between internal (level of fat stores) and external (temperature fall) impulses of wintering migration of Azov and Black Sea anchovies Engraulis encrasicolus maeoticus and E. e. ponticus (“dosage principle”) was revealed. Schools with high fatness begin migration at more high temperature than that ones with low fatness. Intensity of migration also correlates with level of fatness. Regularities obtained may be used for study of wintering migration of other truly marine fishes.

Longissimus dorsi fatty acids composition of Bos indicus and Bos indicus x Bos taurus crossbred steers finished in pasture BABT

Studies were carried out to evaluate the fatty acids composition of Longissimus dorsi muscle, with or without fat thickness, of Bos indicus and Bos indicus x Bos taurus crossbred steers finished in millet (Pennisetum americanum L.) or star grass (Cynodon plectostachyus Pilger) pasture systems with mineral or mineral protein supplementation. Neither the treatment nor the genetic group had effect on meat fatty acids composition. The cut had effect on meat fatty acid composition. The meat without fat thickness had 11% of PUFA, 43% of MUFA and 45% of SFA. The meat with fat thickness had 5% of PUFA, 44% of MUFA and 50% of SFA. PUFA/SFA ratio was 0.10 and 0.25 and n-6/n-3 ratio was 0.80 and 1.27 for cuts with and without fat thickness.

The terms "fat" and "oil" refer to triglycerides of several profiles of fatty acids. Fatty acids that are not bound to other organic components as glycerol are the so-called free fatty acids. Lipids constitute the main energetic source for animals and they have the highest caloric value among all the nutrients. Linoleic acid is the only fatty acid whose dietetic requirement has been demonstrated. Besides supplying energy, the addition of fat to animal diets improves the absorption of fat-soluble vitamins, decreases pulverulence, increases diet palatability, and the efficiency of utilization of the consumed energy. This study aimed to evaluate broiler responses to increases in feed energy (2,870, 3,000 and 3,100 kcal ME/kg) and the inclusion of Acidulated Soybean Soapstock (ASS) when compared to Degummed Soybean Oil (DSO) in feeds from placement to 7 days of age. From 7 to 42 days ASS or DSO were included in diets that contained similar energy and nutrient levels. The objective of the present work was to quantify the constitution and composition chemistry of the precooked goat buchada produced in the state of Paraíba, Brazil. The goat buchada presented considerable yield in relation to the live weight. High protein content was observed in the products analyzed. The lipid content presented high variation as result of the lack of standardization of products produced in the state and no control on parameters such as age, weight and breed of the slaughtered animals was observed. Carcass traits of feedlot crossbred lambs slaughtered at different live weights Ciência Rural

Carcass traits of twenty Texel x Ile de France crossbred lambs slaughtered after weaning (52 days of age), or at 25, 30 and 35kg live weight were evaluated. Lambs were placed in individual stalls (1.5m²) and fed ad libitum with a diet composed of sorghum silage (Sorghum bicolor (L.) Moench) and a concentrate mix (ground corn, soybean meal, calcium carbonate and salt). Commercial dressing percentage was related quadratically with slaughter weight, being highest in lambs slaughtered after weaning. Real dressing percentage increased linearly. Consumer Preferences for Amount and Type of Fat in Ground Beef AgEcon

Scientists and beef industry participants are investigating ways to improve the healthiness of beef. We report results of a nationwide mail survey developed to determine consumers’ preferences for fat content in ground beef and identify how consumers would most like to improve the healthiness of beef. The results from a choice-based conjoint experiment indicate that consumers place significant value on reducing saturated fat and the Omega 6:3 ratio in ground beef, but were relatively unconcerned about conjugated linoleic acid. With the objective of evaluating the relative development of live weight (LW) components, commercial meat cuts and carcass tissues, 40 Saanen male kids were used. These animals were slaughtered when they reached 5.0, 12.5, 20.0, 27.5 and 35.0 kg of LW. The carcass was sectioned as follows: shoulder, neck, 1st to 5th rip, 6th to 13th rip, brisket, chump and leg. The leg was dissected into bones, muscle and fat. An allometric equation was used Y=aXb for relative development estimation. Accounting for Product Substitution in the Analysis of Food Taxes Targeting Obesity AgEcon

We extend the existing literature on food taxes targeting obesity. First, we incorporate the implicit substitution between sugar and fat nutrients implied by a complete food demand system and by conditioning on how food taxes affect total calorie intake. Second, we propose a methodology that accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a demand system in addition to substitution among food groups. Simulations of a tax on added sugars show that the impact of the tax on consumption patterns is understated and the effect on welfare loss overstated when abstracting from this substitution within food groups.

The objective of this study was to estimate tissue composition of the carcass from physical composition of commercial cuts of F1 crossbred goats (Boer with females of non-defined racial standard) finished on native pasture with four levels of supplementation with concentrate (0.0; 0.5; 1.0 and 1.5% of BW in dry matter). It was used 24 non-castrated animals at initial body weight of 15.52 kg and at 120 days of age. An experiment was conducted to determine the effects of different levels of methionine, protein and tallow on productive performance and egg quality of laying hens in the late phase of production. The objective of this study was to develop equations to predict retail product and fat trim (weights and percentages) for Nellore (Bos indicus) cattle. Live ultrasound measurements of the longissimus muscle area, backfat thickness at the 12th rib and rump fat depth and shrunk body weight were obtained from 218 Nellore steers to predict weights and percentages of carcass retail product, pistola retail product and fat trimmings. After slaughter, carcasses were deboned and weighed and percentages of retail cuts were obtained directly.
